Cookie Dough Cupcakes…

I love baking and eating the end results and I found the combination of cupcake with cookie dough on top just heavenly. The recipe has not been made by me its come from Cupcake Jemma’s book called ‘The Cake Book’ which if you like cake is amazing… go buy it (link at the bottom)

I’ve slight adapted the method as I did it differently and I used my buttercream recipe instead.

 

Ingredients:

Cupcake

·         260g unsalted butter

·         130g caster sugar

·         120g soft dark brown sugar

·         40g dark chocolate

·         250g self-raising flour

·         ½ teaspoon bicarbonate of soda

·         4 eggs

·         3 tablespoons of milk

Cookie dough

·         50g dark chocolate

·         160g plain flower

·         130g caster sugar

·         4 tablespoons demerara sugar

·         170g unsalted butter

·         2 tablespoons yogurt

·         2 teaspoons vanilla extract

Buttercream

·         250g unsalted butter

·         500g icing sugar

·         1 teaspoon vanilla extract

·         Milk

So, I am all for chucking it in the kitchen aid and being done with it. In the proper recipe it says you should melt the butter then leave it… I just do not have time for that!! Instead I chopped up the chocolate into fine pieces then threw it all into the kitchen aid.

The oven was set to 170/Gas mark 5 and I popped them in for 18-20 minutes. I currently have a gas oven which is the devil but soon I should have a fan oven which will make life sooooooo much easier as the current bugger burns one side…

Now for the cookie dough. Chocolate chips I think would be easier than chopping chocolate again for this. Again, I threw it all in the Kitchen Aid and it turned into cookie dough and man it tastes good. Pop, it on to cling film or baking parchment then spread it out to 2 cm thick or slightly less then pop it in the freezer to stiffen up a bit.

Then on to the butter cream. Soften the butter for a while so it changes from yellow butter colour to a much paler colour. Then slowly add the icing sugar a bit at a time (I was in a rush and my kitchen looked like a blizzard had hit it). Ones its all mixed together add the vanilla and a dash of milk till it a nice consistency which you could pipe easily.

Once the cakes have cooled I piped a big blob of icing and placed a cube of cookie dough on the top… and that is it. They are super tasty and easy to make.
