This is the simplest soup recipie ever. If you don’t have much time to make a fancy soup with lots of ingredients or your in need of an autumn warmer this is perfect. I got this recipie from my best friends mum so thank you Sandra. x
You will need:
- 500g frozen butternut squash
- 1 or 2 onions
- 1 tbsp olivie oil
- salt and pepper
- 1 pint stock
- optional cream and crispy bacon
To start chop the onion and put it with the oil in a large saucepan. Then throw in the bag of frozen butternut squash and add the stock. If you think it needs it add salt and pepper to taste. Cook it down and then blend it with a hand blender. Then voila its done. A really nice way to jazz it up is swirl in a bit of cream and add some crispy bacon.
There you have a super simple autumnal lunch
P.S it freezes well too!!
